One of my goals following a Dec. where I ate many things I shouldn't have was to try to eat more vegetables. I always start out with great intentions when I go to the grocery store and buy a ton of vegetables. However, they usually end up going bad because I am always in a hurry to eat dinner between work and whatever else I am running off to do. Even the pre-cut salad is involved in this. I have to add stuff to it before I will eat it, but this usually takes so much time and I end up with storage containers of all types of stuff in the fridge that ends up going bad. It is ridiculous. I can't tell you how much money I have spent on vegetables that usually end up in the trash.
Back to the goal of actually eating the vegetables I buy in a way that satisfies my hunger and doesn't end up with me snacking on all kinds of things later. I am not on Pinterest, but a friend of mine posted this salad idea on Facebook that she found on Pinterest. Basically, you pre-make a bunch of individual salads for the week, but they are so cool looking that it made the idea fun.
Here are my 5 jars of salad that I made last night. I did taco salad type ones as well as regular ones with chicken. In my taco salad ones I put hamburger, garbanzo beans, olives and lettuce. I will add a little shredded cheese and salsa ranch dressing and maybe crumble up a few tortilla chips. The other salads have grilled chicken, tomatoes, sugar snap peas, a few garbanzo beans, olives, and lettuce. I plan on adding some feta cheese to these and raspberry vinaigrette dressing. The ones on Pinterest had the salad dressing in the bottom (not touching the lettuce), and you just shook them up. I figured since I go home every day for lunch, I could skip that part and just add it later.
Voila, the quick salad that I WILL grab when I don't actually have time to assemble something for dinner. These are supposed to stay good all week. We will see how they turn out. Tonight is my first test. I will eat one of these in between work and going to the temple.
UPDATE: So good & easy, but holy biggest salad ever Batman. I must remember not to fill the jars quite so full. I couldn't even finish it and had to throw about 1/4 of it away.
